Strings Sets

If i change the strings on my guitar and i keep it on its case, will the strings die even if i don’t play it?
I read that strings usually keep their original “freshness” for about 4-8 HOURS of PLAYING only (depending on the PH level on your hands), but what if i change the strings and keep the instrument (guitar or bass) in its hard shell case for, say, a week or two before i actually get to play it, assuming that in the process of restringing i used hand sanitizer, will the strings still be “fresh” when i get to use it? Or will the oxidation process inevitably begin once i get the strings out of their sealed package? I own several guitars and basses and recently spent a few hundred bucks on new string sets for most of them, and i would like to reserve that bright, fresh sound of new strings for recordings and live performances, hence my question. Depending on the answers i receive, i’ll determine weather i i restring ALL of them now or gradually as recording sessions or gigs come to occurrence. Thanks!
If the strings are tuned to pitch, they are going to wear out. Strings are under significant tension when they are tuned up, and that steel stretches out. When it stretches out, the strings start losing their high end, clarity, and sustain.
